From the bottle, subtle and powerful fragrances tinged with vegetal and aromatic notes escape. Poulo Condor is a unique organic agricole rum. It is produced in Switzerland from sugar cane carefully transported from Vietnam, distilled on the shores of Lake Geneva, and magnified by the crystal-clear water of the Swiss Alps, thus refining the nectar of Vesoul extracted from the cane. The tasting of Poulo is a temporal, unexpected and gustatory journey: that of its history.

VIETNAM
POULO CONDOR
When in 2011 brothers Axel and Alexandre travelled to Vietnam, their home country, and discovered sugar cane fields in abundance in the magnificent Mekong region, their shared passion for rum brought them together in the project to produce the first Swiss agricole rum, thus linking their two countries at heart. It was no less necessary to start transporting frozen sugar cane to carry out the first tests and samples. The improbable meeting with their future distiller in Lavaux completed the gathering of the elements. The first batch is incredible!

Other trips made it possible to set up the logistics to Switzerland as well as the manufacture of a suitable press to produce a larger quantity. Three other rum enthusiasts then joined the project to bring their free time, motivation and complementary skills to the search for an original, new, handcrafted product.

PRODUCTION
POULO CONDOR
Sugar cane is grown without fertilizers and pesticides in the Mekong Delta, following Vietnam's orientation for clean agriculture. It is then transported to the shores of Lake Geneva in Switzerland, where it is pressed to extract its juice: the Vesoul. After the addition of selected local yeasts, the mixture ferments at low temperature for several weeks before being distilled in a column distiller.

DISTILLATION
POULO CONDOR
This type of fermentation produces aromatic molecules typical of a heavy rum.The sugar cane brandy thus obtained is then left to rest for at least a month, before being lowered to 49° thanks to the crystalline water from the Swiss Alps, then filtered and finally bottled directly at the Domaine d'Aucrêt in Lavaux.
